Orzo Salad

Chicago has been in a heat wave the last few weeks so cooking or grilling have not had the same attraction they normally do for me. Tonight’s dinner was about as easy as you can get if you have some simple ingredients on hand. S0metimes it’s “clean out the fridge” nights that are the most satisfying and tonight was like that. We had some left over grilled chicken and some fresh mozzarella as well as a big box of gorgeous champagne tomatoes sitting on the counter. I boiled water for the orzo (barley) shaped pasta, mixed herbs with olive oil and garlic and some leftover walnut/arugula pesto then tossed it all together with the left over chicken, mozzarella and halved tomatoes. Yum, yum.

Orzo Salad with grilled chicken, tomatoes and fresh mozzarella

For 4 servings you’ll need:

1 cup dried orzo pasta, cooked and drained

1 cup grilled chicken breast, cut into pieces

1 cup fresh mozzarella pieces

40 cherry tomatoes, halved

2 Tbsp olive oil

2 cloves garlic

1/4  tsp dried oregano

1/8  tsp dried thyme

shake of sage, fennel

pinch of cayenne

IF you have some pesto put a tablespoon in with oil and herbs and mix

Heat garlic and oil for a minute to release some of the flavor into the oil.  Add spices (and pesto if you have it). Add chicken, tomatoes and mozzarella. Toss well then add drained pasta and toss again.  Serve warm or at room temperature.

Toss chicken, tomatoes and mozzarella with oil, herbs and pesto before adding cooked orzo
