Grilled Apricots with Dark Chocolate, Almonds and Vanilla Ice Cream

Grilling fruit might seem odd if you’ve never tried it but the natural sugars in fruit make it the perfect candidate for hitting the heat. Peaches, pineapple, bananas and apricots to name a few can be grilled and used for either savory or sweet treats. I found some perfect apricots today at the market, ripe but still firm so they won’t fall apart on the grill. Since I’m heating it up to cook dinner I thought they’d be great for dessert with some dark chocolate and the last of our Madagascar vanilla bean ice cream and a little crunch of toasted almonds…SO easy and SO good.

Grilled Apricots with Dark Chocolate, Almonds and Vanilla Ice Cream

For 6 servings you’ll need:

6 ripe but firm apricots, washed and halved

1/4 cup dark chocolate shavings

1/4 cup silvered almonds, toasted

Vanilla bean ice cream

Brush apricots lightly with oil. Grill cut side down for  1  1/2 minutes, turning carefully to grill on skin side. Sprinkle chocolate on each half and allow to melt while grilling for another minute. Remove with a spatula to serving dish. Sprinkle with toasted almonds and serve in a bowl with a scoop of ice cream.
