Stuffed Pork Chops

For anyone who has ridden RAGBRAI, hearing “Pooorrrk Choooppps” will bring a smile or chuckle – and since biking season is warming up like the weather I though some thick cut “Iowa” pork chops would be good to throw on the grill for dinner tonight. I usually marinade them in Wishbone Italian dressing with some Pepper/Shallot blend from the Spice House but tonight I was feeling adventuresome and decided to stuff them. I did marinate them in the Wishbone but mixed in a little soy sauce and some apricot jam. Just sounded good. I sautéed some baby bella mushrooms, garlic, spinach and a little granny smith apple, then tossed that with some ground up Whole Foods “seeduction” bread. I think the pictures speak for themselves.

Stuffed Pork Chops

I had this bread in the freezer, any bread will do

Mix bread with sautéed mushrooms, garlic, spinach and a little apple.

Season with salt, pepper and dried thyme

Create a pocket in the pork chop using a sharp knife. Stuff with mixture.

Secure with toothpicks and grill
