Oh My, I think I found a new love in Roasted Cauliflower

Gorgeous head of cauliflower

Roasted Cauliflower

1 head of cauliflower

olive oil cooking spray

fresh lemon juice

salt

Remove outer leaves and tough stem of cauliflower. Cut flowerets into bite sized pieces. Place on baking sheet and spray with olive oil and salt lightly. Broil until browned checking after 10 minutes or so then turn to finish cooking for another 10 minutes. Remove from oven and squeeze lemon juice over all. Toss and serve warm or room temperature.

    LOVE roasted cauliflower! I make it with a little cumin and cayenne sometimes too… SO GOOD!

    I also put a little red pepper flakes and it is so delicious.

    Yum, both of those ideas sound great! Since this is a new found love I’ll have to try it all!
