Wild Rice and Barley

Sometimes you have to mix things up a little bit and I like to do that using grains with similar cooking times. Both barley and wild rice stand alone just fine but together they make a really flavorful and beautiful combo. Brown the grains prior to adding broth to bring out their natural nutty flavor.

Wild Rice and Barley

for 5-6 servings

1 Tbsp. olive oil

1 onion, chopped

2 cloves garlic, minced

1/2 cup medium pearled barley

1/2 cup wild rice

2 1/4 cups chicken or vegetable stock

Heat oil and sauté onion and garlic in a heavy pot. Add rice and barley, stirring occasionally for about 5 minutes. Add stock, cover and cook over low heat without stirring for 35-45 minutes.

Tuesday dinner – grilled turkey breast, wild rice/barley, steamed broccoli
