Saturday Breakfast

Spinach, mushrooms, bacon, eggs and cheese are all good on their own but together they make one hearty hold-you-’til-dinner, breakfast. I put them on top of some left over roasted potatos rather than serving with toast or an english muffin. Do as you wish and enjoy!

    Ummm. Amy, that looks so delish, esp w the spinach and bacon. We are big into egg salad on toasted sourdough in the morning. I’ve started making it w Koops mustard (horseradish), mayo and a bit of kosher salt. So simple but so good. Love your blog!
