Bowl FULL of Goodness

I’ve been buying these thin skinned persian cucumbers for a few years now. One gets sliced to put in my daugher’s lunch the other half goes into my lunch “salad”.

 

Bowl FULL of Goodness

1/2 persian cucumber, sliced

1/4 red pepper, in chunks

10 grape tomatos, halved

5 baby carrots, sliced

1/4 avocado,  in chunks

red onion, amount to your liking (and depending if you have a meeting after lunch)

1 shake each – oregano, salt and pepper

1  tsp. balsamic vinegar

2 tsp. olive oil

    YUMMY! I am trying to fall in love with vegetables and this, along with the egg over potato recipe above look like they could do it!! How cool that you are doing this blog. If it only came with samples…

    Just made this for my family and it was easy and they LOVED it! Of course, as with ALL recipes I ended up using twice as much avocado as called for! 🙂
